OP, your predicament reminds me of these...

...though here's my personal view(s) of your current situation (I'll try to keep it short)
Your $$$ issue; living with your folks might be a good thing, we Filipinos traditionally wont let go of our children; especially MOM! And as would many parents do, they give it all they've got in supporting their children.
Fiancee budgeting your finances; you've got a winner there my friend

...this will bring a good balance to your union, and one has to be a provider.
Lastly, MOM offered the truck for your transportation; again, as she should, as a parent... you're one lucky fella! I'd go with the flow for now, until you feel comfortable on your own.
